Slimming World Mexican Rice (Syn free!)

500g Passata
1 red onion chopped
½ tsp of chilli
long grain white rice
Frylight
4 minced garlic cloves
2 cups chicken or vegetable stock
1 tablespoon tomato puree
1/2 cup chopped coriander)
Juice of one lime

Combine puree, passata, onion and chilli, blend, and set aside.
Spray a pan with frylight and place onto heat. Add the rice, and stir to coat. Then add tomato mixture, and stock, stirring continuously.
Leave to cook until soft on a low heat.
When cooked, add chopped coriander and lime juice and serve!
